Potassium sorbate is considered to be safe because of its long term safety record and non-toxic profile. Potassium sorbate is non-irritating and non-sensitizing and it’s typical usage rates are 0.025% to 0.1%

Potassium sorbate is used to inhibit microorganisms for shelf stability. It is not a full spectrum preservative.
